This recipe is just right for when you need it fast. Normally, strawberries are used more in sweet dishes and not so much in salads. But I find them extremely fine in combination with spinach. Let’s take a detailed look at this lovely salad. I make sure the strawberries are organic, as I do with most of the food I buy. The spinach should be a baby spinach variety, or a very fresh young spinach. Once the leaves are too large, they are not easily chewed and may have a bitter aftertaste. Add to this my tried and true balsamic dressing made with olive oil, balsamic vinegar, maple syrup, salt and pepper.
To give the salad a special touch, I top it with caramelized hazelnuts. How do I do it? Coarsely chop a handful of hazelnuts and toast in a small skillet over medium heat. Once the nuts start to become fragrant and lightly brown, I add the maple syrup. Now just wait for the liquid in the maple syrup to evaporate and the nuts to caramelize. Ready!
