Samoa cookies, have you heard of them? I discovered them the other day while researching on Pinterest and immediately fell in love. There was only one thing that bothered me and that was the caramel in the middle. Please don’t misunderstand, I am a big fan of delicious caramel. However, I do not like the manufacturing method so completely. How many times have I tried and failed to make healthy sugar-based caramel? Those who know me know that I always conjure up a solution out of the hat and this time it is date caramel. Healthy, easy to make and incredibly delicious.

What are Samoa Cookies? They are cookies, which are built in different layers. The base is a shortbread (or shortbread) topped with caramel, toasted coconut shavings and chocolate. If you’re in the mood for a version without shredded coconut, here are my popular tagalons.
The base of the cookies consists of flour, margarine, raw cane sugar, bourbon vanilla, a pinch of salt and a small sip of plant milk. This is all worked together to form a compact dough, which is also processed further immediately afterwards. Prepare cookie cutters, roll out dough and go. I use corrugated cookie cutters, but really anything works. Round they should be and not too crazy, otherwise it will be a little harder to spread the caramel.

The second layer is date caramel, which I definitely prefer to the classic caramel with sugar. It’s quick to make, wholesome and naturally sweet. On top, add a layer of toasted shredded coconut and dark vegan chocolate. Ready are the fine, vegan cookies my dears. Chocolate, coconut and caramel have always been a very good idea.

Samoa cookies (30 minutes)
FOR THE COOKIE DOUGH:
- 160 g Spelt flour alternatively gluten-free flour mixture
- 125 g Margarine cut into pieces
- 50 g Raw cane sugar
- 1 tbspn Baking powder
- A pinch of salt
- ¼ tbspn Bourbon vanilla
- 15 ml Plant milk
DATE CARAMEL:
TOPPING:
- ½ Cup Coconut shavings
- 90 g dark vegan chocolate drops
Anleitung
- One serving of date caramel according to this recipe
- Heat oven to 175 degrees convection (195 degrees top/bottom heat) and line a baking sheet with baking paper or a permanent baking mat.
- FOR THE COOKIE DOUGH Place flour, margarine, raw cane sugar, baking powder, salt, bourbon vanilla and plant milk in a baking bowl and work with your hands until a smooth dough forms.160 g Spelt flour, 125 g Margarine, 50 g Raw cane sugar, 1 tbspn Baking powder, A pinch of salt, ¼ tbspn Bourbon vanilla, 15 ml Plant milk
- Roll out on a floured surface and cut out cookies with a cookie cutter of your choice and place directly on the baking sheet. Bake for 10-12 minutes and remove from oven. Allow to cool completely.
- Turn oven temperature down to 160 degrees. Spread shredded coconut on a baking sheet and toast for about 5 minutes. After 2 minutes, run a spoon through the tray so that everything is browned evenly. Remove from the oven and let cool.½ Cup Coconut shavings
- Melt dark vegan chocolate carefully over a water bath.90 g dark vegan chocolate drops
- FOR THE FINAL COOKIES Take one cookie each, spread with date caramel, sprinkle with coconut shavings and decorate with melted chocolate.½ Cup Coconut shavings, One serving of date caramel according to this recipe
