Sandwich with hummus and grilled vegetables always comes in handy when you want something different. What’s the first thing that comes to mind when you don ‘t feel like cooking? I usually think of pasta with a quick sauce. It can also be a sandwich, or why not? I love sandwiches and make them way too infrequently. This version is especially delicious with grilled vegetables from the oven, a nice layer of hummus and smoked tofu. Sounds delicious? It is, and I’d say we’re going to get right into it.

What do we need for today’s recipe? A toaster oven, an oven and a handful of ingredients. The hummus I prepare extra and there is also a recipe for it here. The grilled vegetables require a red bell bell pepper and a zucchini, which I slice. These are seasoned with a little olive oil, salt and pepper and go into the oven. Not to forget the smoked tofu, which joins the vegetables in the oven. However, the tofu slices need only half the time and are ready after 10 minutes.
TIP: If you like, you can use another spice of your choice instead of salt and pepper. I’m thinking shawarma, tandoori, garam masala or herbs de Provence.
Now we get to my favorite part and that is assembling the sandwich. Toast slices, hummus, grilled vegetables, tofu slices and arugula. That’s all there is to it. Here your creativity is needed, because the ingredients are variable and you can add or omit something at will.

- 12 Slices Whole wheat toast
- 1 Piece Paprika core removed, cut into slices
- 1 Piece Zucchini sliced
- 15 ml Olive oil
- A strong pinch of salt
- Fresh pepper to taste
- 200 g Smoked tofu sliced
- 1 Cup Arugula
- 90 g Hummus Bought or homemade
TOPPING:
- Fresh sprouts of your choice
Anleitung
- Preheat the oven to 200 degrees Celsius (220 degrees Celsius top-bottom heat) and line a baking tray with a baking mat or wrapping paper.
- Place peppers and zucchini in a large bowl. Add olive oil, salt and pepper and mix until everything is well combined.1 Piece Paprika, 1 Piece Zucchini, 15 ml Olive oil, A strong pinch of salt, Fresh pepper to taste
- Spread on the baking sheet and add the tofu slices. Put in the oven and grill for 20 minutes.200 g Smoked tofu
- Remove tofu slices from the oven after about 10 minutes, when they are already baked golden brown. If the baking time is longer, the slices may become dry.
- Meanwhile, toast the toast slices.12 Slices Whole wheat toast
- For the final assembly of the sandwiches, spread 2 tablespoons of hummus on each slice of toast, spread arugula as desired, top with grilled vegetables and tofu, and (optionally) sprouts of choice.
