Cold noodle salad with grapefruit, edamame and Asian dressing is a wonderful dish for summer. Right now the temperatures are rising and I love dishes that are quick to prepare and served cold. At the moment I almost always make salads, in all sorts of variations. I love Asian food and the other day we went to a wonderful restaurant in Munich called SOY. I put together a wide variety of Asian tapas and really enjoyed it. My friends also liked it very much. That’s the downside of living in the country, because you can’t quickly sit down at a purely vegan restaurant. That’s why I enjoy the days in Munich all the more.
Cold noodle salad with grapefruit and edamame
The salad is quickly assembled from gluten-free Asian noodles, edamame, carrots and scallions. The dressing is also ready in no time from sesame oil, tamari, rice vinegar, maple syrup and grated ginger. That is also almost everything. Now all that’s missing is the topping of mint leaves, grapefruit and sesame seeds. Are you ready for this delicious salad?
If you are not a big fan of grapefruits, then I recommend replacing the fruit with oranges. They also bring in a nice fruity note and are better suited for people who don’t like bitter. I’m a big fan of grapefruits, especially combined with the sweetness and tartness of this salad.
TIP: Soy sauce is not gluten-free, so I recommend Tamari, for those on a gluten-free diet. I also find tamari a tad more subtle in taste, although opinions differ here.

Cold noodle salad with grapefruit and edamame
Utensilien
FOR THE PASTA SALAD:
- 250 g Brown rice noodles
- 3 Piece small carrots cut into fine strips
- 3-4 Piece Spring onion cut into rings
- 200 g Edamame
FOR THE DRESSING:
- 45 ml maple syrup or other liquid sweetener of choice
- 60 ml Tamari
- 30 ml Sesame oil
- 30 ml Rice vinegar
- 1 Tbsp ginger grated
AS TOPPING:
- Fresh mint leaves
- 1 Piece Grapefruit filleted
- Sesame seeds
Anleitung
- Cook brown rice noodles according to package directions. Rinse with cold water and place in a large bowl. Add carrots, green onion and edamame. Set aside.250 g Brown rice noodles, 3 Piece small carrots, 3-4 Piece Spring onion, 200 g Edamame
- FOR THE DRESSING Place maple syrup, tamari, sesame oil, rice vinegar, and ginger in a small bowl and stir until well combined. Add directly to the bowl with the vegetables and pasta and mix well.45 ml maple syrup, 60 ml Tamari, 30 ml Sesame oil, 30 ml Rice vinegar, 1 Tbsp ginger

- Best fresh. Store remaining lettuce in an airtight container in the refrigerator for no more than one day.
