Rice wafers with nutmeats and chocolate are the perfect answer if you are looking for a healthy, vegan and delicious snack. I’ve seen the rice cake variations so often on social media that I really wanted to make my own. The bananas had to be there because it is my very favorite fruit. Chocolate and nut were also at the start, because without it is also kind of boring. After a little fiddling, it turned into these delicious vegan rice cakes, spread with nut puree and topped with bananas and chocolate.

Our snack today is quick and easy made with rice cakes, nut puree, maple syrup and dark vegan chocolate. Quick and easy is also always my motto, as you may have already gotten with if you have been following me for a while. I make the nut puree from hazelnut puree and maple syrup. Carefully melt the dark chocolate over the water bath. Finally, I cut the banana into slices.
Now it’s time to start assembling. I take one rice cake each, spread it with nut puree and put four banana slices on each. On top I drizzle the melted dark vegan chocolate- Once all the waffles are topped, I put them in the fridge and let them set for 30 minutes. Now they are ready to eat and you can take a big bite. TIP: You can also use any other nut puree instead of hazelnut puree. I am thinking, for example, of almond paste or a mixed nut puree.

- 1 Piece Banana sliced
- 60 g Hazelnut puree
- 30 g maple syrup
- 80 g dark vegan chocolate
