Quick, easy and creamy cucumber salad (VEGAN) with plant-based yoghurt and dill. Ideal as a side dish with grilled food or on its own with fresh baguette.
Prepare a salad bowl. Slice the cucumber, peel and crush the garlic. Add the cucumber, plant-based yoghurt, hot mustard, lemon juice, apple cider vinegar, maple syrup, garlic clove, fresh dill, salt and pepper to the bowl. Stir, season to taste and add more seasoning if necessary.
1 piece cucumber, 1 clove of garlic, 250 g plant-based yoghurt, 1 tsp hot mustard, 2 tbsp lemon juice, 1 tbsp apple cider vinegar, 1 tsp maple syrup, 2 tbsp fresh dill, ½ tsp salt, Pepper to taste
Transfer to plates, garnish with your desired toppings and serve.
